The team at Clonakilty approach their wood management with incredible care, and the Double Oak Cask is a brilliant example of their craft. Maturing their whiskey right on the dramatic edge of the Atlantic Ocean, they let the salty sea air gently shape the spirit before giving it a highly unique cask finish. To create this release, they take a beautifully balanced blend of malt and grain whiskeys that have rested in classic ex-bourbon barrels. They then finish the liquid in a combination of virgin American oak and European oak casks that previously held red wine from Bordeaux. The European casks are specially shaved and re-toasted, a process that completely revitalises the wood and brings out incredible depth of flavour. In the glass, it pours a bright, inviting gold. The aroma is instantly fresh and sweet, offering lovely waves of vanilla sponge cake, fresh apples, and a touch of zesty orange. On the palate, it is incredibly engaging and smooth.
